Coconut Pesto Penne

Ingredients:

- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 eggs, lightly beaten
- 2 cups penne pasta
- 2 cups egg noodles
- 1 can (14.5 ounces) cream of coconut
- 2 potatoes, diced
- 1 can (10.75 ounces) tomato soup
- 1/2 cup pesto

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.

3. Add the eggs and cook until lightly scrambled, about 2 minutes.

4. Add the penne, egg noodles, cream of coconut, potatoes, and tomato soup. Stir to combine.

5. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.

6. Add the pesto and stir to combine.

7. Simmer for an additional 5 minutes.

8. Serve hot. Enjoy!
