Coconut Rice Bowl with Kohlrabi, Brussels Sprouts, and Veggies
Ingredients:
- 2 cups of white rice
- 1 kohlrabi, peeled and diced
- 1 cup of Brussels sprouts, trimmed and halved
- 1 onion, diced
- 2 spring onions, chopped
- 2 cups of fresh spinach, chopped
- 2 carrots, peeled and diced
- 1 can of coconut milk
- 1 cup of oat milk
Instructions:
1. In a medium saucepan, bring 2 cups of water to a boil. Add the rice and cook for 15 minutes, or until the rice is cooked through.
2. In a large skillet, heat a tablespoon of oil over medium heat. Add the kohlrabi, Brussels sprouts, onion, and spring onions and cook for 5 minutes, stirring occasionally.
3. Add the spinach, carrots, coconut milk, and oat milk to the skillet and stir to combine. Simmer for 10 minutes, stirring occasionally.
4. When the vegetables are cooked through, add the cooked rice to the skillet and stir to combine. Simmer for an additional 5 minutes.
5. Serve the Coconut Rice Bowl with Kohlrabi, Brussels Sprouts, and Veggies hot. Enjoy!
