Recipe Name: Coconut Rice Stuffed Celery Root

Ingredients:
- 1 cup brown rice
- 1 red onion, diced
- 1/2 cup mascarpone cheese
- 1 cup passata
- 1/4 cup fresh parsley, chopped
- 1 celery root
- 1/2 cup coconut milk
- 2 eggs

Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the brown rice according to package instructions and set aside.
3. In a skillet, sauté the diced red onion until translucent.
4. Add the cooked brown rice, mascarpone cheese, passata, and fresh parsley to the skillet. Mix well and cook for another 2-3 minutes.
5. Cut the top off the celery root and hollow out the center to create a cavity for the rice stuffing.
6. Fill the hollowed celery root with the rice mixture and place it in a baking dish.
7. In a bowl, whisk together the coconut milk and eggs. Pour this mixture over the stuffed celery root.
8. Cover the baking dish with foil and bake in the preheated oven for 45-50 minutes, or until the celery root is tender.
9. Remove the foil and bake for an additional 10-15 minutes until the top is golden brown.
