Ingredients:
- 1 cup rice
- 2 eggs
- 1 onion, chopped
- 1 tomato, diced
- Salt to taste
- 1 cup pasta
- 2 cloves garlic, minced
- 2 tbsp coconut powder
- Juice of 1 lemon
- 1 cucumber, diced
- 1 tsp sugar
- 1 tsp paprika
Instructions:
1. Cook the rice according to package instructions and set aside.
2. Hard boil the eggs, peel and chop them into small pieces.
3. In a bowl, mix together the chopped onion, diced tomato, cucumber, and boiled eggs.
4. In a separate bowl, prepare the salad dressing by mixing lemon juice, sugar, salt, and paprika. Set aside.
5. In a pan, heat some oil and sauté the minced garlic until fragrant.
6. Add the cooked rice to the pan and stir in the coconut powder. Mix well to combine.
7. In a separate pot, cook the pasta according to package instructions.
8. Once the pasta is cooked, drain and add it to the rice mixture. Stir well.
