Coconut Shrimp Rice Bowl
Ingredients:
-1 cup uncooked white rice
-1 cup uncooked shrimp, peeled and deveined
-1 zucchini, diced
-1 onion, diced
-2 cloves garlic, minced
-2 tablespoons tomato paste
-1/2 cup coconut cream
-2 tablespoons olive oil
-Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the shrimp and cook until pink and cooked through, about 5 minutes.
4. Add the zucchini and tomato paste and cook for an additional 3 minutes.
5. Add the coconut cream and stir to combine.
6. Reduce heat to low and simmer for 5 minutes.
7. Meanwhile, cook the rice according to package instructions.
8. Once the rice is cooked, add it to the skillet and stir to combine.
9. Season with salt and pepper to taste.
10. Serve the Coconut Shrimp Rice Bowl warm. Enjoy!
