Cod and Pea Polenta
Ingredients:
-1 lb. cod live
-1 can of peas
-2 loaves of bread, cubed
-4 tablespoons of butter
-1 cup of corn grits
-1 cup of polenta
Instructions:
1. Preheat oven to 350°F.
2. Grease a 9x13 inch baking dish with butter.
3. Place cubed bread in the bottom of the dish.
4. In a medium saucepan, bring 4 cups of water to a boil.
5. Add the corn grits and polenta to the boiling water and stir until combined.
6. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
7. Add the peas and cod live to the polenta mixture and stir until combined.
8. Pour the polenta mixture into the prepared baking dish and spread evenly.
9. Dot the top of the polenta with butter.
10. Bake for 25 minutes, or until the top is golden brown.
11. Allow to cool for 10 minutes before serving. Enjoy!
