Cod and Rice Casserole

Ingredients:

- 2 cups of cooked white rice
- 2 cups of cooked pasta
- 2 carrots, peeled and diced
- 4 knackis, diced
- 1 can of red beans, drained and rinsed
- 2 tablespoons of lardons
- 2 tomatoes, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cod fillets, cut into cubes
- 1/2 cup of crème fraîche
- 1/2 cup of passata

Instructions:

1. Preheat oven to 350°F (175°C).

2. In a large bowl, combine the cooked rice, cooked pasta, diced carrots, diced knackis, red beans, lardons, diced tomatoes, diced onion, and minced garlic. Mix until all ingredients are evenly distributed.

3. Transfer the mixture to a 9x13 inch baking dish.

4. Place the cubed cod fillets on top of the mixture.

5. In a separate bowl, mix together the crème fraîche and passata. Pour the mixture over the cod and rice mixture.

6. Cover the baking dish with aluminum foil and bake in preheated oven for 25 minutes.

7. Remove the foil and bake for an additional 10 minutes.

8. Serve hot. Enjoy!
