Cod and Vegetable Rice Bake
Ingredients:
- 2 large potatoes, peeled and diced
- 2 carrots, peeled and diced
- 1 onion, diced
- 2 celery stalks, diced
- 2 cups cooked white rice
- 2 eggs, lightly beaten
- 2 cod fillets, cut into cubes
- 1 cup shredded cheese
Instructions:
1. Preheat oven to 350°F.
2. Grease a 9x13 inch baking dish.
3. In a large bowl, combine potatoes, carrots, onion, celery, rice, eggs, and cod.
4. Pour mixture into the prepared baking dish.
5. Sprinkle cheese over the top.
6. Bake for 30 minutes, or until the cheese is melted and the vegetables are tender.
7. Serve warm. Enjoy!
