Codfish and Potato Hash

Ingredients:

- 2 codfish fillets
- 2 potatoes, peeled and diced
- 1 bell pepper, diced
- 1 onion, diced
- 2 tablespoons olive oil

Instructions:

1. Preheat oven to 400 degrees F.

2. In a large bowl, combine the diced potatoes, bell pepper, and onion.

3. Add the olive oil and mix until everything is evenly coated.

4. Spread the mixture onto a baking sheet and bake for 20 minutes.

5. Meanwhile, heat a skillet over medium-high heat and add the codfish fillets.

6. Cook for 5 minutes per side, or until the codfish is cooked through.

7. Remove the baking sheet from the oven and add the cooked codfish to the potato mixture.

8. Mix everything together and season with salt and pepper to taste.

9. Serve the codfish and potato hash warm. Enjoy!
