Codfish and Rice with Courgette and Peas

Ingredients:

- 2 codfish fillets
- 1 cup of long grain rice
- 1 courgette, diced
- 1/2 cup of frozen peas
- 2 tablespoons of olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375°F (190°C).

2. Place the codfish fillets on a baking sheet lined with parchment paper. Season with salt and pepper. Bake in the preheated oven for 15 minutes.

3. Meanwhile, cook the rice according to package instructions.

4. Heat the olive oil in a large skillet over medium heat. Add the diced courgette and cook for 3-4 minutes, stirring occasionally.

5. Add the cooked rice, frozen peas, and cooked codfish to the skillet. Stir to combine. Cook for an additional 5 minutes, stirring occasionally.

6. Serve the codfish and rice with courgette and peas warm. Enjoy!
