Coffee Cake


- 1 cup all-purpose flour
- 1 cup self-raising flour
- 1/2 cup vegetable oil
- 2 eggs
- 1 cup sugar
- 1/2 cup strong brewed coffee


1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

2. In a large bowl, whisk together the all-purpose flour, self-raising flour, vegetable oil, eggs, and sugar until combined.

3. Slowly add the coffee and stir until the mixture is smooth.

4. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

5. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Enjoy!
