Ingredients:
- 1 red bell pepper (capsicum), sliced
- 1 cup spinach leaves
- 1 carrot, julienned
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions:
1. Heat olive oil in a large pan over medium heat.
2. Add minced garlic and sauté for 1-2 minutes until fragrant.
3. Add sliced red bell pepper, julienned carrot, and diced tomatoes to the pan. Cook for 5-7 minutes until the vegetables are slightly tender.
4. Stir in the spinach leaves and cook for an additional 2-3 minutes until wilted.
5. Season the stir-fry with soy sauce, salt, and pepper. Mix well to combine.
6. Remove from heat and serve hot as a colorful and nutritious side dish or over cooked rice for a complete meal.
