Ingredients:
- 2 carrots, julienned
- 1 radish, thinly sliced
- 2 tomatoes, diced
- 1 onion, sliced
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add the sliced onions and cook until they are translucent, about 2-3 minutes.
3. Add the minced garlic and grated ginger, and sauté for another minute until fragrant.
4. Add the julienned carrots and sliced radish to the skillet, and stir-fry for 3-4 minutes until they start to soften.
5. Add the diced tomatoes to the skillet and cook for an additional 2-3 minutes until they release their juices.
6. Pour in the soy sauce and season with salt and pepper to taste. Stir well to combine all the flavors.
7. Cook for another 2-3 minutes until the vegetables are cooked but still slightly crunchy.
8. Remove from heat and garnish with fresh cilantro before serving.
