Recipe Name: Colorful Veggie Lentil Bake

Ingredients:
- 2 carrots, grated
- 1 beetroot, grated
- 1 cup red cabbage, thinly sliced
- 1 cup white cabbage, thinly sliced
- 1 cup cooked lentils
- 2 sweet potatoes, peeled and diced
- 2 eggs
- 1 onion, diced
- 1 cup grated cheese
- Salt and pepper to taste

Instructions:
1. Preheat the oven to 375°F (190°C) and grease a baking dish.
2. In a large bowl, mix together the grated carrots, beetroot, red cabbage, white cabbage, cooked lentils, sweet potatoes, eggs, onion, and half of the grated cheese. Season with salt and pepper.
3. Transfer the mixture to the prepared baking dish and spread it out evenly.
4. Sprinkle the remaining grated cheese on top of the mixture.
5. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
6. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the vegetables are tender.
7. Let the bake cool slightly before slicing and serving. Enjoy your colorful veggie lentil bake!
