Vegetable Rice

Ingredients:

- 1 cup of cooked rice

- 1 onion, chopped

- 1 capsicum, chopped

- 2 tomatoes, chopped

- 2 tablespoons of coriander, chopped

- 1 teaspoon of red chili powder
- 1 teaspoon of turmeric
- 1 teaspoon of salt

Instructions:

1. Heat oil in a pan and add the chopped onion. Fry until golden brown.

2. Add the capsicum, tomatoes, coriander, red chili powder, turmeric and salt. Fry for a few minutes.

3. Add the cooked rice and mix well.

4. Cook for a few minutes until everything is well combined.

5. Serve hot with your favorite accompaniments.
