Courgette Gruyère Potato Frittata
Ingredients:
- 2 tablespoons olive oil
- 1 small onion, diced
- 1 small courgette, diced
- 2 medium potatoes, peeled and diced
- 4 large eggs
- 1/2 cup grated Gruyère cheese
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 375°F.
2. Heat olive oil in a large oven-safe skillet over medium heat. Add onion and cook until softened, about 5 minutes.
3. Add courgette and potatoes and cook until vegetables are tender, about 8 minutes.
4. In a medium bowl, whisk together eggs, cheese, salt and pepper.
5. Pour egg mixture over vegetables in skillet and stir to combine.
6. Transfer skillet to preheated oven and bake until frittata is set and golden brown, about 25 minutes.
7. Let cool for 5 minutes before serving. Enjoy!
