Cow Brain and Chicken Liver Pilaf
Ingredients:
-1 lb cow brain, diced
-1 lb chicken liver, diced
-2 chilies, diced
-1 teaspoon turmeric
-2 cloves garlic, minced
-1 teaspoon ginger, minced
-1 teaspoon salt
-1 teaspoon cracked black pepper
-1 onion, diced
-1 teaspoon cumin
-1 teaspoon peppermint
-1 teaspoon echinacea
-1 teaspoon cinnamon
-1 tablespoon parsley, chopped
-2 eggs, beaten
-2 cups cooked rice
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large bowl, combine diced cow brain, diced chicken liver, diced chilies, turmeric, minced garlic, minced ginger, salt, cracked black pepper, diced onion, cumin, peppermint, echinacea, cinnamon, and chopped parsley.
3. In a separate bowl, beat the eggs.
4. Add the beaten eggs to the cow brain and chicken liver mixture and mix until combined.
5. Grease a 9x13 inch baking dish with cooking spray.
6. Spread the cow brain and chicken liver mixture into the baking dish.
7. Top with cooked rice.
8. Bake in preheated oven for 30 minutes.
9. Serve hot. Enjoy!
