Cow Tongue and Spinach Stir Fry
Ingredients:
-1 cow tongue
-1/2 onion, diced
-1/2 cup olives, sliced
-2 cups spinach
-3 strips bacon, diced
-2 tablespoons soy sauce
Instructions:
1. Place the cow tongue in a large pot and cover with water. Bring to a boil and simmer for 1 hour.
2. Remove the cow tongue from the pot and let cool. Once cool, slice into thin strips.
3. In a large skillet, heat the bacon over medium-high heat. Cook until the bacon is crispy, about 5 minutes.
4. Add the onions and olives to the skillet and cook until the onions are translucent, about 5 minutes.
5. Add the cow tongue strips to the skillet and cook for an additional 5 minutes.
6. Add the spinach and soy sauce to the skillet and cook until the spinach is wilted, about 3 minutes.
7. Serve the cow tongue and spinach stir fry warm. Enjoy!
