Cow Tongue Rice Bowl

Ingredients:

-1 cow tongue
-2 cups of uncooked white rice
-6 eggs
-1/2 cup of crumbled blue cheese
-1 tomato, diced
-1 onion, diced
-1 lemon, juiced
-1 orange, juiced

Instructions:

1. Preheat oven to 350 degrees F.

2. Place the cow tongue in a baking dish and cover with foil. Bake for 1 hour.

3. Meanwhile, cook the rice according to package instructions.

4. In a large bowl, whisk together the eggs, blue cheese, tomato, onion, lemon juice, and orange juice.

5. Once the cow tongue is cooked, remove from the oven and let cool. Once cooled, shred the tongue into small pieces.

6. Add the shredded cow tongue to the egg mixture and stir to combine.

7. Grease a 9x13 baking dish with cooking spray.

8. Pour the egg mixture into the baking dish and spread evenly.

9. Top with the cooked rice and spread evenly.

10. Bake for 25-30 minutes, or until the eggs are set and the top is golden brown.

11. Serve warm and enjoy!
