Crab and Asparagus Frittata

Ingredients:

• 3 eggs
• 1/4 red chilli, finely chopped
• 3 asparagus spears, trimmed and cut into 1-inch pieces
• 1 tsp butter
• 50g crab meat
• Handful baby spinach

Instructions:

1. Preheat oven to 375°F.

2. Heat butter in a 10-inch oven-safe skillet over medium heat.

3. Add asparagus and chilli and cook until asparagus is tender, about 5 minutes.

4. Add crab meat and baby spinach and cook for an additional 2 minutes.

5. In a medium bowl, whisk together eggs and season with salt and pepper.

6. Pour egg mixture into the skillet and stir to combine.

7. Place skillet in preheated oven and bake for 15 minutes, or until eggs are set.

8. Serve warm. Enjoy!
