Cranberry Apple Potato Pancakes

Ingredients:

-2 large potatoes, peeled and grated
-2 cloves garlic, minced
-2 tablespoons cornflour
-1/4 cup cranberry sauce
-2 apples, peeled and grated
-1/2 teaspoon salt
-1/4 teaspoon ground black pepper
-2 tablespoons vegetable oil

Instructions:

1. In a large bowl, combine the grated potatoes, garlic, cornflour, cranberry sauce, grated apples, salt, and pepper. Mix until all ingredients are evenly distributed.

2. Heat the vegetable oil in a large skillet over medium-high heat.

3. Scoop about 1/4 cup of the potato mixture into the skillet and flatten it into a pancake shape. Cook for 3-4 minutes, or until the bottom is golden brown. Flip the pancake and cook for an additional 3-4 minutes, or until the other side is golden brown.

4. Repeat with the remaining potato mixture. Serve the pancakes warm with additional cranberry sauce, if desired. Enjoy!
