Cranberry Muffins
Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup milk
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1 cup fresh or frozen cranberries
Instructions:
1. Preheat oven to 375°F. Grease a 12-cup muffin tin with butter or cooking spray.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a separate bowl, whisk together the eggs, milk, oil, and sugar until combined.
4. Add the wet ingredients to the dry ingredients and mix until just combined.
5. Gently fold in the cranberries.
6. Divide the batter evenly among the prepared muffin cups.
7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
8. Let cool for 10 minutes before serving. Enjoy!
