Carrot Cake Cheesecake

Ingredients:

- 2 cups shredded carrots
- 1 teaspoon salt
- 3 eggs
- 1 cup all-purpose flour
- 8 ounces Philadelphia cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon

Instructions:

1. Preheat oven to 350 degrees F. Grease a 9-inch springform pan and set aside.

2. In a medium bowl, combine the shredded carrots and salt. Set aside.

3. In a separate bowl, beat the eggs until light and fluffy. Add the cream cheese, sugar, butter, vanilla extract, and cinnamon and mix until smooth.

4. Add the flour to the egg mixture and mix until just combined.

5. Add the carrot mixture and mix until just combined.

6. Pour the batter into the prepared springform pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

7. Let cool completely before serving. Enjoy!
