Carrot and Cream Cheese Frittata
Ingredients:
- 2 cups shredded carrots
- 2 tablespoons olive oil
- 4 eggs
- Salt and pepper, to taste
- 4 ounces Philadelphia cream cheese, cubed
Instructions:
1. Preheat oven to 375 degrees F.
2. Heat olive oil in a large oven-safe skillet over medium heat. Add shredded carrots and cook for 5 minutes, stirring occasionally.
3. In a medium bowl, whisk together eggs, salt, and pepper. Pour egg mixture into the skillet with the carrots and stir to combine.
4. Add cubed cream cheese to the skillet and stir to combine.
5. Place skillet in the preheated oven and bake for 15-20 minutes, or until eggs are set.
