Creamy Broccoli and Cauliflower Omelette
Ingredients:
- 2 cups of chopped broccoli
- 2 cups of chopped cauliflower
- 1/2 cup of chopped onion
- 2 eggs
- 2 tablespoons of butter
- Salt and pepper to taste
Instructions:
1. Heat a large skillet over medium heat and add the butter.
2. Add the onion and sauté until softened, about 3 minutes.
3. Add the broccoli and cauliflower and cook until tender, about 5 minutes.
4. In a separate bowl, whisk together the eggs and season with salt and pepper.
5. Pour the egg mixture into the skillet and cook until the eggs are set, about 5 minutes.
6. Flip the omelette and cook for an additional 3 minutes.
7. Serve warm and enjoy!
