Creamy Broccoli and Mushroom Pasta

Ingredients:

- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced
- 2 cups broccoli florets
- 2 carrots, diced
- 2 potatoes, diced
- 1 (14.5 ounce) can diced tomatoes
- 1 (6 ounce) can tomato paste
- 1/2 cup cream cheese
- 8 ounces uncooked pasta
- 2 eggs, lightly beaten

Instructions:

1. Heat the olive oil in a large skillet over medium heat. Add the garlic and mushrooms and cook until the mushrooms are softened, about 5 minutes.

2. Add the broccoli, carrots, and potatoes and cook for an additional 5 minutes.

3. Add the diced tomatoes and tomato paste and stir to combine. Simmer for 10 minutes.

4. Add the cream cheese and stir until melted and combined.

5. Meanwhile, cook the pasta according to package instructions.

6. Once the pasta is cooked, drain and add to the skillet with the vegetables. Stir to combine.

7. Add the eggs and stir until combined. Simmer for an additional 5 minutes.

8. Serve warm. Enjoy!
