Creamy Cauliflower and Pumpkin Soup

Ingredients:

-1 head of cauliflower, chopped
-1 cup of spinach, chopped
-1 cup of pumpkin, chopped
-2 stalks of celery, chopped
-1 can of diced tomatoes
-4 cups of vegetable broth
-1 teaspoon of garlic powder
-1 teaspoon of onion powder
-1 teaspoon of dried thyme
-1 teaspoon of dried oregano
-Salt and pepper to taste

Instructions:

1. In a large pot, heat the vegetable broth over medium-high heat.

2. Add the cauliflower, spinach, pumpkin, celery, and tomatoes.

3. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.

4. Add the garlic powder, onion powder, thyme, oregano, salt, and pepper.

5. Simmer for an additional 10 minutes.

6. Remove the pot from the heat and let cool for 10 minutes.

7. Using an immersion blender, blend the soup until creamy and smooth.

8. Serve warm and enjoy!
