Creamy Chicken and Potato Soup


-1 tablespoon of oil
-1 large onion, diced
-2 cups of diced chicken
-4 cups of chicken broth
-2 cups of water
-4 cups of diced potatoes


1. Heat the oil in a large pot over medium heat.

2. Add the onion and cook until softened, about 5 minutes.

3. Add the chicken and cook until lightly browned, about 5 minutes.

4. Add the chicken broth, water, and potatoes. Bring to a boil, then reduce the heat and simmer for 15 minutes or until the potatoes are tender.

5. Using an immersion blender, blend the soup until creamy.

6. Serve warm. Enjoy!
