Creamy Chicken and Rice

Ingredients:

- 2 cups of cooked white rice
2 boneless, skinless chicken breasts, cut into cubes
- 1/2 cup shredded cheese
- 1/2 cup sour cream
- 1/2 cup fresh spinach, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- Juice of 1/2 lemon

Instructions:

1. Preheat oven to 350°F.

2. In a large skillet, heat a tablespoon of oil over medium-high heat. Add the chicken cubes and cook until lightly browned and cooked through, about 5 minutes.

3. Add the onions and garlic and cook for another 2 minutes.

4. Add the spinach, cherry tomatoes, and heavy cream and cook for another 3 minutes.

5. Add the cooked rice and stir to combine.

6. Add the shredded cheese and stir to combine.

7. Add the sour cream and stir to combine.

8. Add the lemon juice and stir to combine.

9. Transfer the mixture to a 9x13 baking dish and spread out evenly.

10. Bake for 25 minutes, or until the cheese is melted and bubbly.

11. Serve hot. Enjoy!
