Recipe Name: Creamy Chicken and Vegetable Rice Casserole

Ingredients:
- 1 cup uncooked rice
- 2 cups cooked chicken, shredded or diced
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- Salt, to taste
- 1 can cream of chicken soup
- 1 cup Brussel sprouts, halved
- 1 cup broccoli florets
- 1 cup mixed peppers and onions, sliced
- Seasonings of your choice (such as pepper, paprika, thyme)

Instructions:
1. Preheat your oven to 375°F (190°C).
2. Cook the rice according to package instructions and set aside.
3. In a large skillet, sauté the diced onion, bell pepper, and garlic until softened.
4. Add the shredded or diced cooked chicken to the skillet and season with salt and your choice of seasonings. Cook until heated through.
5. Stir in the cream of chicken soup and mix well to combine all the ingredients.
6. In a large mixing bowl, combine the cooked rice, chicken and vegetable mixture, Brussel sprouts, broccoli, and mixed peppers and onions. Mix everything together until well combined.
7. Transfer the mixture to a greased casserole dish and spread it out evenly.
8. Cover the casserole dish with foil and bake in the preheated oven for 25-30 minutes, or until the vegetables are tender.
9. Remove the foil and bake for an additional 10 minutes to allow the top to brown slightly.
