Recipe Name: Creamy Chicken and Vegetable Skillet

Ingredients:
- 1 lb chicken breast, cut into bite-sized pieces
- 1 onion, diced
- 1 bell pepper, sliced
- 3 cloves garlic, minced
- 1 tomato, diced
- Salt, to taste
- 1/2 cup creme fraiche
- 1 capsicum, chopped
- 1 cup broccoli florets
- 1 can of diced tomatoes
- Handful of cherry tomatoes, halved
- Fresh basil leaves, chopped
- 1 tsp dried oregano

Instructions:
1. In a large skillet, heat some oil over medium heat. Add the diced onion and bell pepper, and cook until softened.
2. Add the minced garlic and cook for another minute until fragrant.
3. Push the vegetables to one side of the skillet and add the chicken pieces. Cook until browned on all sides.
4. Stir in the diced tomato and season with salt. Cook for a few minutes until the tomato softens.
5. Add the creme fraiche, capsicum, broccoli, canned tomatoes, cherry tomatoes, basil, and oregano. Stir everything together until well combined.
6. Cover the skillet and let the mixture simmer for about 10-15 minutes, or until the chicken is cooked through and the vegetables are tender.
7. Taste and adjust seasoning if needed.
8. Serve hot, garnished with additional fresh basil leaves if desired.
