Ingredients:
- 1 lb chicken breast, cut into bite-sized pieces
- 2 eggs
- 8 oz pasta of your choice
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook the pasta according to package instructions. Drain and set aside.
2. In a bowl, whisk the eggs and Parmesan cheese together. Set aside.
3. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through.
4. Add the minced garlic to the skillet and sauté for a minute until fragrant.
5. Reduce the heat to low and add the cooked pasta to the skillet. Toss to combine with the chicken and garlic.
6. Slowly pour the egg and cheese mixture over the pasta, stirring constantly to coat the pasta evenly. The heat from the pasta will cook the eggs and create a creamy sauce.
7. Pour in the heavy cream and continue to stir until the sauce thickens slightly.
8. Season with salt and pepper to taste.
9. Remove from heat and garnish with fresh parsley before serving.
