Ingredients:
- 1 lb chicken breast, diced
- 1 cup mashed pepper
- 1 cup mashed tomato
- 4 cloves garlic, minced
- 1 onion, diced
- 8 oz pasta
- 1 cup cheese, shredded
- 1 cup heavy cream
- 2 tbsp tomato paste
- Spices (salt, pepper, Italian seasoning)
- 2 stalks celery, chopped
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat some oil over medium heat. Add the diced chicken and cook until browned on all sides. Remove the chicken from the skillet and set aside.
3. In the same skillet, add the minced garlic, diced onion, and chopped celery. Cook until the vegetables are softened.
4. Add the mashed pepper and mashed tomato to the skillet. Stir in the tomato paste and spices. Cook for a few minutes until the flavors combine.
5. Pour in the heavy cream and stir well. Let the mixture simmer for a few minutes.
6. Meanwhile, cook the pasta according to package instructions until al dente. Drain the pasta and add it to the skillet with the creamy sauce.
7. Add the cooked chicken back to the skillet and mix everything together.
8. Transfer the mixture to a baking dish and sprinkle the shredded cheese on top.
9. Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
