Recipe: Creamy Chickpea Pasta with Zucchini and Tomato
Ingredients:
- 1 can of chickpeas
- 1 zucchini, sliced
- 2 tomatoes, diced
- 1 apple, chopped
- 1 banana, sliced
- 1/2 cup of cream
- 8 oz of pasta
- 1/2 cup of orange juice
Instructions:
1. Cook the pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat some oil over medium heat. Add the zucchini and cook until slightly browned.
3. Add the diced tomatoes and chickpeas to the skillet. Cook for another 5 minutes.
4. Stir in the cream and orange juice. Let it simmer for a few minutes.
5. Add the cooked pasta to the skillet and toss to combine.
6. Serve the creamy chickpea pasta in bowls, topped with chopped apple and sliced banana.
