Creamy Cod and Rice

Ingredients:

- 2 tablespoons of olive oil
- 1 pound of cod fillets
- 1 cup of uncooked white rice
- 1 can of peas, drained
- 1 can of corn, drained
- 2 cups of chicken broth
- 1 can of cream of chicken soup

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the cod fillets and cook for about 5 minutes on each side, until lightly browned and cooked through.

3. Remove the cod from the skillet and set aside.

4. Add the rice to the skillet and cook for about 3 minutes, stirring occasionally.

5. Add the peas, corn, chicken broth, and cream of chicken soup to the skillet and stir to combine.

6. Bring the mixture to a boil, then reduce the heat to low and cover the skillet.

7. Simmer for about 20 minutes, or until the rice is cooked through.

8. Add the cod back to the skillet and cook for an additional 5 minutes.

9. Serve the creamy cod and rice warm. Enjoy!
