Make Creamy Lemon Chicken Pasta

Ingredients:
- 250g spaghetti
- 2 chicken breasts, diced
- 1 cup heavy cream
- 1 lemon, juiced and zested
- 1 onion, chopped
- 1 carrot, grated
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions:
1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat some olive oil over medium heat. Add the diced chicken and cook until browned and cooked through. Remove from skillet and set aside.
3. In the same skillet, add a bit more olive oil if needed and sauté the chopped onion and grated carrot until softened.
4. Pour in the heavy cream, lemon juice, and lemon zest. Stir well to combine.
5. Add the cooked chicken back to the skillet and let the sauce simmer for a few minutes until slightly thickened.
6. Season with salt and pepper to taste.
