Creamy Polenta with Spinach and Tomato
Ingredients:
-1 cup polenta
-2 cups vegetable broth
-1/2 cup Parmesan cheese, grated
-1 tablespoon olive oil
-1 onion, diced
-2 cloves garlic, minced
-1/2 teaspoon dried oregano
-1/4 teaspoon red pepper flakes
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1 cup cherry tomatoes, halved
-2 cups spinach, chopped
Instructions:
1. In a medium saucepan, bring the vegetable broth to a boil.
2. Slowly whisk in the polenta and reduce heat to low. Cook for about 5 minutes, stirring constantly, until the polenta is thick and creamy.
3. Remove from heat and stir in the Parmesan cheese.
4. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
5. Add the oregano, red pepper flakes, salt, and black pepper and cook for 1 minute.
6. Add the cherry tomatoes and spinach and cook until the spinach is wilted, about 3 minutes.
7. To serve, spoon the polenta onto plates and top with the tomato and spinach mixture. Enjoy!
