Make Creamy Quinoa Pasta Salad

Ingredients:
- 1 cup quinoa
- 2 cups chicken broth
- 1 cucumber, diced
- 1 capsicum, diced
- 1 tomato, diced
- 1 onion, finely chopped
- 1 carrot, grated
- 1 leek, sliced
- 2 eggs
- 1 cup cream
- Salt and pepper to taste
Instructions:
1. Rinse the quinoa under cold water and drain. In a medium saucepan, bring the chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until all the liquid is absorbed. Remove from heat and let it cool.
2. In a large mixing bowl, combine the cooked quinoa, diced cucumber, capsicum, tomato, onion, carrot, and leek. Mix well.
3. In a separate bowl, beat the eggs and mix in the cream. Season with salt and pepper.
4. Pour the egg and cream mixture over the quinoa salad and stir until well combined.
5. Transfer the mixture to a baking dish and bake in a preheated oven at 350°F (180°C) for about 20-25 minutes or until the top is golden brown.
6. Remove from the oven and let it cool slightly before serving.
