Creamy Salmon Penne
Ingredients:
-1 lb. penne pasta
-1 lb. salmon, cut into cubes
-1 red pepper, diced
-2 cups spinach, chopped
-1/4 cup sun dried tomatoes, chopped
-1 cup heavy whipping cream
-1/2 cup Parmesan cheese, grated
-1 teaspoon salt
-1/2 teaspoon pepper
-1 teaspoon rosemary, chopped
-2 cloves garlic, minced
-2 tablespoons parsley, chopped
Instructions:
1. Bring a large pot of salted water to a boil. Add the penne and cook according to package instructions. Drain and set aside.
2. Heat a large skillet over medium-high heat. Add the salmon cubes and cook for 3-4 minutes, stirring occasionally.
3. Add the red pepper, spinach, and sun dried tomatoes to the skillet and cook for an additional 2-3 minutes.
4. Reduce the heat to low and add the heavy whipping cream, Parmesan cheese, salt, pepper, rosemary, garlic, and parsley. Simmer for 5 minutes, stirring occasionally.
5. Add the cooked penne to the skillet and stir to combine. Cook for an additional 2-3 minutes, or until the sauce has thickened.
6. Serve the creamy salmon penne warm. Enjoy!
