Recipe Name: Creamy Vegan Tofu Alfredo Pasta

- 8 oz pasta of your choice
- 1 cup silken tofu
- 2 tbsp nutritional yeast
- 1/4 cup grated parmesan cheese
- Salt and pepper to taste

1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a blender, combine the silken tofu, nutritional yeast, and grated parmesan cheese. Blend until smooth and creamy.
3. Season the tofu mixture with salt and pepper to taste.
4. In a large pan, heat the tofu mixture over medium heat until warmed through.
5. Add the cooked pasta to the pan and toss until the pasta is coated evenly with the creamy tofu sauce.
6. Serve hot, garnished with additional parmesan cheese if desired.
