Ingredients:
- 2 catfish fillets
- 2 potatoes, peeled and diced
- 2 tablespoons oil
- Salt, to taste
- 1/2 cup panko breadcrumbs
- 1 cup fresh spinach
- 1/4 cup grated parmesan cheese
- 1 onion, sliced

Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a bowl, toss the diced potatoes with 1 tablespoon of oil, salt, and parmesan cheese. Spread them out on a baking sheet and bake for 20 minutes or until golden brown and crispy.
3. While the potatoes are baking, season the catfish fillets with salt and coat them in panko breadcrumbs.
4. Heat the remaining oil in a skillet over medium heat. Add the sliced onion and cook until softened.
5. Add the catfish fillets to the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through.
