Crispy Baked Chicken Thighs with Carrots, Potatoes, and Red Onions

Ingredients:

- 8 chicken thighs
- 2 tablespoons olive oil
- 2 tablespoons Italian seasoning
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons paprika
- 2 teaspoons salt
- 2 teaspoons black pepper
- 2 large carrots, peeled and cut into 1-inch pieces
- 2 large potatoes, peeled and cut into 1-inch pieces
- 1 large red onion, cut into 1-inch pieces

Instructions:

1. Preheat oven to 425°F.

2. In a large bowl, combine olive oil, Italian seasoning, garlic powder, onion powder, paprika, salt, and black pepper.

3. Add chicken thighs to the bowl and toss to coat.

4. Place chicken thighs in a single layer in a large baking dish.

5. Add carrots, potatoes, and red onion to the bowl and toss to coat with the seasoning mixture.

6. Place vegetables around the chicken thighs in the baking dish.

7. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.

8. Serve and enjoy!
