Crispy Chicken and Veggie Stir Fry
Ingredients:
-1 lb boneless, skinless chicken breasts, cut into cubes
-1/2 head of cabbage, shredded
-1/2 head of cauliflower, cut into florets
-2 carrots, sliced
-1/2 lb brussel sprouts, halved
-3 tablespoons olive oil
-2 cloves garlic, minced
-2 tablespoons low sodium soy sauce
-1 teaspoon sesame oil
-1 teaspoon ground ginger
-1/2 teaspoon black pepper
Instructions:
1. Heat olive oil in a large skillet over medium-high heat.
2. Add chicken cubes and cook until golden brown, about 5 minutes.
3. Add garlic, cabbage, cauliflower, carrots, and brussel sprouts and cook until vegetables are tender, about 5 minutes.
4. Add soy sauce, sesame oil, ginger, and black pepper and stir to combine.
5. Cook for an additional 2-3 minutes, stirring occasionally.
6. Serve hot. Enjoy!
