Crispy Chicken Liver Rum Balls
Ingredients:
- 2 cups cooked chicken livers
- 2 cups all-purpose flour
- 2 tablespoons baking powder
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 eggs, lightly beaten
- 1/2 cup vegetable oil
- 1/2 cup dark rum
- 1/2 cup chopped walnuts
- 1/2 cup raisins
- 1/2 cup shredded coconut
Instructions:
1. Preheat oven to 350°F.
2. In a large bowl, combine the flour, baking powder, salt, and pepper.
3. In a separate bowl, mix together the eggs, oil, and rum.
4. Add the wet ingredients to the dry ingredients and mix until just combined.
5. Add the chicken livers, walnuts, raisins, and coconut and mix until everything is evenly distributed.
6. Form the mixture into 1-inch balls and place on a baking sheet lined with parchment paper.
7. Bake for 15-20 minutes, or until golden brown.
