Crispy Chicken Thighs with Roasted Carrots and Celery
Ingredients:
- 4 chicken thighs
- 2 large carrots, peeled and cut into 1-inch chunks
- 2 celery stalks, cut into 1-inch pieces
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 400°F.
2. Place chicken thighs in a single layer on a baking sheet.
3. In a medium bowl, toss carrots and celery with olive oil and season with salt and pepper.
4. Spread carrots and celery around chicken thighs on baking sheet.
5. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
6. Serve hot. Enjoy!
