Crispy Cod with Roasted Potatoes and Onions
Ingredients:
- 2 cod fillets
- 2 potatoes, cut into cubes
- 1 onion, cut into cubes
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 400 degrees F.
2. Place the potatoes and onions in a baking dish and drizzle with olive oil. Season with salt and pepper.
3. Bake for 25 minutes, stirring occasionally.
4. Meanwhile, season the cod fillets with salt and pepper.
5. Heat a large skillet over medium-high heat. Add the cod fillets and cook for 3-4 minutes per side, or until golden and cooked through.
6. Remove the potatoes and onions from the oven and top with the cod fillets.
7. Serve and enjoy!
