Crispy Fish with Roasted Vegetables
Ingredients:
- 1 large potato, peeled and cut into cubes
- 1/2 head of cabbage, cut into thin strips
- 1 onion, diced
- 1 carrot, peeled and cut into cubes
- 2 tablespoons of oil
- 1 fish fillet
Instructions:
1. Preheat oven to 400°F (200°C).
2. In a large bowl, combine potato, cabbage, onion, carrot, and oil. Toss to coat.
3. Spread the vegetables onto a baking sheet and bake for 25 minutes, stirring once halfway through.
4. Place the fish fillet on top of the vegetables and bake for an additional 15 minutes, or until the fish is cooked through.
5. Serve the crispy fish with the roasted vegetables. Enjoy!
