Crispy Salmon with Tomato-Cilantro Salsa

Ingredients:

- 2 salmon fillets
- 2 tablespoons olive oil
- 2 tablespoons bread crumbs
- 1 teaspoon sugar
- 1 teaspoon pepper
- 1 teaspoon salt
- 2 tablespoons flour
- 1 tomato, diced
- 1/4 cup cilantro, chopped
- Juice of 1 lime

Instructions:

1. Preheat oven to 375°F.

2. In a shallow bowl, combine the bread crumbs, sugar, pepper, salt, and flour.

3. Place the salmon fillets in the bowl and coat evenly with the bread crumb mixture.

4. Heat the olive oil in a large oven-safe skillet over medium-high heat.

5. Place the salmon fillets in the skillet and cook for 2-3 minutes per side, until golden brown.

6. Transfer the skillet to the preheated oven and bake for 8-10 minutes, until the salmon is cooked through.

7. Meanwhile, in a small bowl, combine the diced tomato, cilantro, and lime juice.

8. Serve the salmon with the tomato-cilantro salsa. Enjoy!
