Ingredients:
- 1 small watermelon
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 cup cold water
- Vegetable oil for frying
- Optional: powdered sugar for dusting

Instructions:

1. Cut the watermelon into small cubes or slices, removing any seeds. Pat the watermelon pieces dry with a paper towel to remove excess moisture.

2. In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Mix well to combine all the dry ingredients.

3. Slowly add the cold water to the dry ingredients, whisking until a smooth batter forms. The batter should be thick enough to coat the watermelon pieces.

4. Heat vegetable oil in a deep fryer or a heavy-bottomed pot to 350°F (180°C).

5. Dip each watermelon piece into the batter, ensuring it is well coated on all sides.

6. Carefully place the battered watermelon into the hot oil, frying in batches to avoid overcrowding the pot.

7. Fry the watermelon fritters for 2-3 minutes, or until they are golden brown and crispy. Use a slotted spoon to remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.

8. Optional: Dust the crispy watermelon fritters with powdered sugar for a touch of sweetness.
