Cucumber Fried Rice
Ingredients:
- 2 cups cooked white rice
- 1 cucumber, diced
- 1 teaspoon chili flakes
- 2 tablespoons lemon juice
- 2 tablespoons soy sauce
- 1 teaspoon freshly ground black pepper
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 teaspoon mustard
- 2 tablespoons ketchup
- 2 tablespoons mayonnaise
- 2 eggs, lightly beaten
Instructions:
1. Heat a large skillet over medium-high heat. Add the cooked rice and cook, stirring occasionally, until lightly browned, about 5 minutes.
2. Add the cucumber, chili flakes, lemon juice, soy sauce, pepper, garlic, onion, mustard, ketchup, and mayonnaise to the skillet. Stir to combine.
3. Reduce the heat to medium and add the eggs. Stir to combine. Cook until the eggs are cooked through, about 5 minutes.
4. Serve the cucumber fried rice warm. Enjoy!
